Ingredients:
2 eggs
1/2 cup of sugar
1/2 cup of oil
2 teaspoons of baking powder
pinch of salt
1 teaspoon of vanilla essence
1 tablespoon of lemon juice
2 1/2 cups of flour
Ingredients for the filling:
1 cup of ground poppy seeds
1/2 cup of boiling water
1/2 cup of strawberry or plum jam
2 tablespoons of sugar
1/2 cup of raisins
Elaboration:
We form the dough by combining all the ingredients: it should be firm yet tender. We roll it out thinly and cut it into triangles.
We prepare the filling by cooking all the ingredients over very low heat or in a bain-marie, until all the water is absorbed.
Place a teaspoon of filling on each triangle and fold to form a triangular sponge cake. Brush with egg yolk and bake in a moderate oven until golden brown.
We happily serve them and, as we taste them, we remember the story of Purim.
