Grind the biscuits into a fine powder. In a bowl, combine the margarine and sugar, mixing well. Add the ground biscuits and form a paste. Press the mixture into the bottom and up the sides of a greased and floured baking pan, covering the entire bottom and sides. Bake in a moderate oven for 10 minutes. Remove from the oven and let cool. Filling: In a large bowl, mix the cheeses, heavy cream, honey, and vanilla extract. Pour the filling over the cooled tart shell and freeze for 8 hours or overnight. Remove from the freezer and refrigerate for at least one hour before serving. Decorate with sliced fresh strawberries or any other red fruit.

The truth is, I've never tried the recipe, so I don't know why it doesn't include eggs. But I can tell you that there are always many recipes for the same dish. Eggs are an ingredient that binds the mixture, something that cooked sugar also achieves.
I recommend trying the recipe with small quantities, so that if you need eggs, you won't have wasted too many cookies… Here in La Plata, due to the lack of kosher ingredients, we constantly substitute one thing for another and experiment as we go…
