Ingredients:
2 cups of peeled and grated raw potatoes, using the fine side of the grater
2/3 cup sifted flour
1 lightly beaten egg
1/2 teaspoon of salt
1/2 teaspoon of grated onion (it can be chopped very finely and fried until it turns caramel-colored, which makes it tastier)
2 tablespoons of breadcrumbs

The grated potato is squeezed very well, trying to remove as much liquid as possible. The rest of the ingredients are added, mixed very well, and the kneidlaj, or small dumplings the size of an egg or a walnut, are prepared. They are thrown into boiling water or broth and can be eaten with the broth or served separately with gravy or a meat sauce.
