Ingredients:
1 beef brisket (in some places it is called that)
2 grated onions
6 crushed garlic cloves
1 cup of ketchup (tomato sauce)
3/4 cup tamarind syrup)
1 cup of Coca-Cola
2 cups of barbecue sauce
4 cups of apricot jam
1 can of 5 1/2 ounces prune juice, or 2/3 cup

The day before, season the brisket with all the ingredients, cover, and marinate in the refrigerator until the next day.

The next day, in a deep baking dish, place the breast with its sauce and bake covered at 350ºF for approximately 3 hours and 30 minutes or until tender.

Remove from the oven and let cool, remove the meat from the sauce and slice thinly with an electric knife

Strain the sauce and pour some over the slices of meat.

When ready to serve, heat the meat with its sauce, and heat the remaining sauce separately to serve on the side.

TAMARIND SYRUP
8 cups of tamarind juice
5 cups of sugar
1 ounce of lemon salt (saltpeter)
Mix the tamarind juice, saltpeter and sugar, cook over low heat stirring constantly, until thickened, let cool and store in sterilized jars.
You can also make the small amount needed for this meat recipe.
