Saltpeter can be obtained at drugstores or pharmacies.

Day 1: apply saltpeter all over the meat (as if salting the meat).
Leave in the refrigerator in a tightly sealed container.

Day 2: Wash well to remove salt. Dry the meat and marinate it well with the following mixture:

oil, oregano, ground chili pepper, paprika, garlic.

Leave in the refrigerator in a tightly sealed container.

Day 3: Cook with all the seasoning in a pot or oven. No water needed; it cooks in its own fat. Keep an eye on it and add a little more liquid if it needs it. Make sure it doesn't dry out, so it doesn't burn.

Cooking time (approximate) 1 hour and a half until it is very soft.

It can be eaten hot or cold.
